Stuffed Peppers....YUM!!! This is a classic dish that my Mom made for our family while I was growing up. I especially enjoyed it in the summertime,when red bell peppers were in season (and not $3 each!)
I'll be honest, I bought these peppers at Costco, but I guarantee that most farmer's markets or even grocery stores are carrying these right now for a reasonable price. If you can't find them or prefer green bell peppers, by all means use what works for you.
Here's what you'll need
4-6 bell peppers (any color)
2 bags of boil in a bag rice, I use the brown rice
1 lb ground beef, turkey, or chicken
1 small onion, finely chopped
½ tsp cumin
1 ½ Tbsp Southwest Seasoning
16 oz tomato sauce
1 cup shredded Monterey jack cheese (shred your own, the flavor and texture is worth it!)
DIRECTIONS:
Bring a large pot of water to a boil. Boil rice according to directions. Drain and set aside.
Lightly trim the very bottom of each pepper so that the peppers stand up. Cut the top of the peppers and clean out ribs and seeds. Place in a microwave safe dish, cover with a lid or plastic wrap and steam for 2-3 minutes until they’re just getting tender. Set aside
Drizzle oil in a large skillet. Add chopped onion and sauté for 5 min over med heat. Add ground beef and cook on med-high heat, breaking the meat up as it cooks. Cook until no longer pink.
Add cooked rice, tomato sauce, cumin, and Southwest seasoning to the ground beef mixture. Stir to combine. Spoon meat and rice mixture into each pepper until the peppers are full, but not overflowing. You may have extra filling which would be great in a tortilla or for a taco salad the next day.
Top each pepper with ¼ cup of cheese and bake at 350 for 15-20 minutes. Serve with salsa if you would like.

i love stuffed peppers and my mom made them when we were kids too! my recipe is completely different than this one, but i may need to try this. it looks so yummy with the melted cheese on top ;)
