Ingredients:
4 slice of bread
1 Chicken Breast, cooked and finely chopped (I used rotisserie)
2 T mayo, divided
2 whole roasted red peppers, sliced
1/4 cup Manchego Cheese, grated
butter
Spread the butter on one side of each slice of bread. Spread mayo on the other side of bread. Mix chicken and cheese. Place two pieces of the buttered side down, top with chicken and cheese mixture and half the roasted red pepper. Place mayo side down towards the peppers, leaving the buttered side up. Press in a panini maker or use a large skillet until golden brown on each side. Let cool for a few minutes, slice in half and serve.
