This is one of those things I could live on, especially in the summer months, when heating up the kitchen seems like too much work. It's quick and easy too.
Download Black Bean and Corn Salad
Here's what you'll need, minus the vinegar (I didn't use that)
Ingredients:
1 large can of black beans (or 2 small cans), drained and rinsed
1 cup of frozen or fresh corn, thaw under cool water if frozen
1 jalapeno, seeded and finely diced
½ red onion, finely diced
1 tomato, seeded and diced
1 pinch of kosher salt
1 T. Southwest Seasoning
Juice of 2 limes
Drizzle of olive oil
Combine all ingredients and let set in refrigerator for at least 30 minutes. Serve with enchiladas, grilled fish or chicken, fajitas, or just by itself.
