I don't know about you but I use chicken at least once week for meals (I know many of you use it much more than that). Sometimes even I get stuck in a chicken rut, baked chicken, grilled chicken, skillet sauteed chicken that all tastes the same. In case you didn't know myrecipes.com (home of all the cooking light, southern living, real simple, sunset, etc magazines) has a "chicken tonight" feature.
Here are a few recipes that I think sound really yummy (all photos are from the website I found them on...again, I only wish I was this talented as a food photographer...I really think I missed my calling in life!)

Chicken and Summer Vegetable Tostada
My Northern friends...if you have never had King Ranch Chicken Casserole you are truly missing out. I never had this until I moved to Texas...and I think that other than beef it's the state dish of Texas. I know that it was created on the King Ranch, which is one of Texas's largest ranches. We used to drive through it every summer on our way to South Padre Island. This recipe is SO good and great for entertaining or taking to a friend for dinner. I do use low sodium soups for it, otherwise it gets a bit salty. Anything baked with cheese on top calls my name...

Lemon Garlic Roasted Chicken (I've made this and it's so simple and so good...great for a Sunday dinner)
Tequila Lime Chicken (this is a Pioneer Woman recipe and it's delicious)
As a personal preference I only buy organic free range chicken. I buy Coleman Natural at Costco, but have also bought organic chicken at Super Target and HEB. BTW...just because chicken says natural doesn't mean it's organic...it just means it's real chicken...is that a relief or a concern...not sure!? Look for the organic label. Anyway...I just make a point to buy as much of my meat organic as I possibly can. Yes, it's quite a bit more expensive, but this is why I only make meals with meat 2-3 times per week. I like Laura's Lean for beef and sometimes I'll buy beef at the Farmer's Market, where they say it's grass fed and hormone free.

Well, even so far away we still think alike! My planned meal for today (Sunday) with all ingredients purchased Wednesday...Lemon and Garlic Roast Chicken, Garlic Mashed Potatoes and Green Beans.
