One of my projects on my ever growing project list is to go through this ever growing basket of magazines in my living room. I currently subscribe to the the following magazines: Southern Living, Cooking Light, Food Network magazine, Better Homes and Gardens, and Creating Keepsakes (which I seriously can't stand anymore...if I get one idea out of the entire magazine I think it's a success and I'm ready for my subscription to run out) I figure if I can get through one magazine a day the pile should dwindle down quickly. As I was reading/flipping through the August issue of Cooking Light I came across an article on zucchini, so I thought I'd share a few recipes I think look good from myrecipes.com.
Summer Squash Soup with Pesto and Parmesan
Parmesan Zucchini Sticks with Smoky Romesco Sauce (Romesco sauce is fantastic on grilled chicken and fish too)
Huevos Ranceros with Zucchini and Green Pepper (totally making these for a vegetarian dinner next week)
Chicken and Summer Vegetable Tostadas (I also think you could make these into quesadillas)
Yellow Squash Ribbons with Red Onion (I've made these for lunch several times this summer)
Zucchini Oven Chipsand something sweet; Chocolate Zucchini Cake
and now a few from Pioneer Woman (because her recipes ROCK and sometimes make you feel like you should ROLL to the couch)
Fried Zucchini StringsPineapple Zucchini Sheet Cake (if I make this will someone come take some home to their family? Please? I can't have this whole cake in my house...otherwise I'd have to run 10 miles and well...I can't even run a mile...sigh)
and a few from Simply Recipes (yet another food blog I've discovered...I could seriously get rid of my 75, no I'm NOT exaggerating and stop judging me, cookbooks and just use the internet...but I love my cookbooks)
Stuffed Zucchini with Turkey Sausageand that will end the post ode to the zucchini...but don't forget about this recipe of mine that I posted a while back...it's great too...
