So yesterday I said I was going to make stuffed chicken breasts....well once 6:00 came around I decided I was too tired to do that, so I invented something new...and very yummy. It's one of those things that would be great for 2 people or 12 people and could be made in about the same amount of time.
Wrapped Chicken Breasts
Boneless, skinless chicken breasts (however many you want to make)
Thinly sliced proscuitto (2 slices for each chicken breast) You could also use ham.
Sliced swiss cheese (1 piece for each chicken breast)
Preheat oven to 350 degrees. Wrap each chicken breast with proscuitto. Place chicken in an oven safe baking dish. Drizzle with olive oil and season with pepper. Bake for 30 minutes. Remove from oven and place 1 slice of swiss cheese on each wrapped chicken breast. Return to oven for 5 minutes or until cheese is bubbly. Note: you don’t really need salt because of the proscuitto and cheese.
Wrapped Chicken Breasts—Italian style
Same as above, just switch out the swiss cheese for fresh or smoked mozzarella. Add 2 tomato slices and a pinch of dried basil on top of the chicken breast before wrapping with the prosciutto.
